Course Meat Processing Apprenticeship
Location J.B.C.C. Meat Processing Center – McAlester, Oklahoma
Average Training Time Three-year apprenticeship training
Special Restrictions Must have high school diploma or GED. Must have 3 years left on sentence, no more than 4.5 years. Must be approved by medical for food service. No physical problems that limit ability to lift or work must have minimum TABE score levels of 8.0.
Course Description Three-year training program involving on the job training and classroom work. Students will learn slaughter, carcass fabrication, sausage making, curing & smoking, further processing.

New classes begin in September of each year. Case managers need to contact Skills Center coordinator or instructor to set up interviews for prospective students before July.
