In this course, the student will learn baking skill techniques. They will learn to make quick breads, yeast breads and rolls, sweet dough, as well as decorated cakes.

Bake Shop Principles
- Prepare quick breads
- Prepare yeast breads
- Prepare enriched yeast dough
- Produce pies and tarts
- Produce a variety of types of cookies
- Prepare a variety of types of cakes
- Describe techniques used in mixing, panning, baking, and basic decorating
- Demonstrate basic icing and decorating techniques
- Prepare meringue
- Prepare pastry dough
- Prepare laminated dough
- Prepare syrups and sauces
- Prepare fritters, crepes, cobblers and crisps
- Prepare petits fours
Classroom assessments will allow the student to work toward successful completion of the
