Garde Manger for the Culinary Hospitality Assistant

This course will introduce students to the art and craft of the cold kitchen. Students will learn of the different ways to creatively express their talents through food and presentations. This class will offer them a chance to become artist and display their personality through their food creations.

-Identify tools and equipment used in garde manger, emphasizing safety and sanitation procedures.
-Demonstrate basic garnishes.
-Preparation of cold items to include soups, salads, sauces, dressings, marinades, relishes, sandwiches, canapes, and hors d eouvres.
-Demonstrate fundamental skills in the preparation and uses of aspic.
-Develop fundamental skills in the preparaton of force meats( pates, gelantines, ballantines, terrines, sausages).
-Prepare mousses and gelatins.
-Demonstrate food presentation techniques i.e., platters, bowls, and plates.
-Produce decorative centerpieces (i.e. fruit, vegetable carvings, salt dough, tallow and ice carvings).
-Identify and discuss ingredients used in the cold kitchen.
-Identify, taste and discuss cheese and dairy products.
Completion of Learning Activity Packets and various other instructional materials.

Written tests, assignments, lab activities and work study/employability evaluations.
