Meat Processing Workforce Education

The Oklahoma Department of Agriculture, Food and Forestry and the Oklahoma Department of Career and Technology Education have established a meat processing training program at 11 high schools and three technology centers. The program provides up to 64 hours of coursework with hands-on learning in the processing of beef, pork, lamb and goat. CareerTech also offers three self-paced online courses approved by the American Meat Science Association. In addition, a mobile meat processing lab can take meat processing courses across the state to high schools, technology centers and processing plants after students have completed the online curriculum. The curriculums were developed in response to an ever-growing labor shortage at meat processing plants across the state.
